Our mastic comes from the farms of a small island called Chios, in Greece.

When the bark of the mastic tree is carefully scored, the tree begins to “weep” small tears of sap.
Don’t worry. This isn’t tree distress! It’s more like a well-timed spa treatment.

Once the sap is ready, it is picked, sorted, and cleaned. The resin is washed several times and sorted even further to pick out dirty or discolored pieces.
Some lovely old ladies do the entire process by hand from start to finish - and the process is done several times throughout the summer months until the fall.
Next, the resin is organized into small, medium, and large tears and is shipped to us in California.

We grade the sap based on a flavor, texture, and chew rating system which allows us to properly mix the resin with the other saps we use.
We are looking for a consistent "final chew" texture which often requires carefully blending tears together with spruce sap which is graded on a similar system. This allows us to achieve a uniform chew across batches so that no pieces are too sticky or too brittle.
Truly, using mastic in Underbrush is more of an art than a science. And we're still learning about it to this day!
